A quick note before you start
Steam terminology and function names can vary between brands, from Combination Steam to Moisture Plus or Added Steam, however, the cooking principle remains the same:
Combination / Combi Steam = steam + fan-forced heat
This is the setting you’ll use most for everyday cooking.
Loaded Sweet Potatoes

Getting the centre of root vegetables properly soft usually means a long cook time and leathery skin at the end. The added moisture in combi steam helps potatoes and sweet potatoes cook faster and more evenly. The inside steams to a fluffy-creamy, tender texture, and the skin browns and dries out without getting tough.
These loaded sweet potatoes are less a recipe than a list of guidelines, and that's exactly what makes them so useful on a busy night.
Whole sweet potatoes go into the oven and cook noticeably faster than they would in a regular oven, with skins that blister and insides that steam down to a soft, creamy consistency. No foil, no fuss.
Split them open and pile on your toppings of choice for a healthy, easy dinner. Think bacon, black beans, corn and sour cream. It's a genuinely satisfying dinner that's ideal for busy school nights or casual entertaining.
One Pan Vegetarian Gnocchi Bake
Gnocchi can get dry and chewy in the oven, which is why baked gnocchi usually needs a lid and some liquid to improve the texture. A combi steam oven creates that moist environment automatically - the gnocchi stays soft and pillowy inside while the exterior gets a chance to turn golden and slightly crispy at the edges. No lid required, maximum flavour achieved.
One-pan dinners are fabulous in combi steam ovens, and the results are so much better and faster than in a regular oven!
Here, gnocchi, cherry tomatoes, garlic and rosemary roast together in one dish, with the combi steam setting keeping the gnocchi soft while the tomatoes blister and the edges of everything turn golden.
Stir through spinach, cream and pesto right at the end for a rich, saucy finish. It's a genuine weeknight hero: minimal cleanup, deeply comforting, and easy to riff on with whatever you've got in the fridge.
Basque Baked Cheesecake
Baked cheesecakes can easily overcook at the edges before the centre sets, especially at the high temperature a Basque cheesecake needs to get that deep, burnished top. Combi steam helps the batter cook through more evenly, so you get an intensely caramelised top and a wobbly, silky-smooth centre at the same time. No cracked or overcooked edges in sight.
This recipe might be the biggest surprise on the list, and the most delicious!
This crustless, deliberately burnt cheesecake gets its signature toasty, caramelised top and silky, custardy centre from a combination of high heat and gentle steam. It looks and tastes every bit like a restaurant dessert.
Mix, pour, bake and chill. You’ll come away with a completely make-ahead, dinner-party-worthy dessert that everyone will think took chef-level skills when in fact it’s the easiest thing you’ve made all week.
