Steam terminology and function names can vary between brands, from Combination Steam to Moisture Plus or Added Steam, however, the cooking principle remains the same:
Combination / Combi Steam = steam + fan-forced heat
This is the setting you’ll use most for everyday cooking.

Guide: ~200°C with medium steam (around 50-60%)

Pro tips:
Cut a few slits in the pastry lid so steam can escape while it puffs.
Place the pie dish/es on a sheet pan—puff pastry pies love to bubble over when the filling gets hot.
Chicken Tray Bake

Using combination cooking keeps the chicken juicy inside while allowing the edges to caramelise, while vegetables cook evenly without drying out.
Mode: Combination / Combi Steam
Guide: ~200°C with low steam (around 25–30%)

Pro tips:
For crispy edges, spread in a single layer; if you’re crowding the tray, use two trays and swap halfway through.

Guide: 160–170°C with medium to high steam (around 60–80%)

Pull when the top turns from glossy to matte; a skewer should come out with moist crumbs (not wet batter).
Want a more browned top? Finish the last few minutes with no added steam / 0% humidity (no moisture injection).
Lamb Rack Roast With Herb Crust

A lamb rack is a great example of how combi steam elevates a classic dish. Steam helps retain moisture, while dry heat creates a beautifully finished crust.
Mode: Combination / Combi Steam or steam-assisted programs like Moisture Plus
Guide: 175–180°C with low steam (around 25-30%)
