The 3-in-1 Power of Combination (Combi) Steam

Think of combi steam ovens as a 3-in-1 appliance, offering the functionality of a traditional fan-forced oven, or a steamer, or a combination of both! By combining traditional convection with added steam, you achieve professional-level results: a golden, crispy exterior with a succulent interior. It’s the ultimate oven for any passionate cook or entertaining-loving household.

Because these ovens offer precise temperature control, they are excellent for defrosting delicate ingredients, reheating leftovers to their original quality, and even proofing dough. Some combi steam oven models allow you to adjust steam levels for precise control; the choice between adjustable and fixed steam depends on whether you prefer simplicity or precision. 

Understanding Full Steam vs. Steam Assist

While the terms sound similar, their performance differs significantly:

  • Full Steam: These units maintain a steady 100°C (or lower) with 100% humidity. Similar to a stovetop steamer but with precise temperature control and added cooking space. However, some full steam ovens lack conventional oven features, reducing versatility. Additionally, some brands use “full steam” to describe combi steam ovens, so be sure to clarify the capabilities of your chosen model before purchasing.

  • Steam Assist (Moisture Assist, Moisture Plus): These refer to a type of steam oven that introduces a small amount of steam into regular cooking functions. These models introduce moisture into a standard cycle. While they cannot perform steam-only cooking (like steaming vegetables), they are perfect for everyday roasting, pastabakes, and baking.

Evaporative Steam vs. Steam Injection

When you purchase a steam oven, the delivery method of the steam affects your long-term  of kitchen maintenance:

  • Steam Injection: This is where steam is created in an external boiler and piped inside the oven. This method is generally preferred for its efficiency and easy cleanup.

  • Evaporative Steam: Water is heated in a reservoir to create moisture.
